10 Dairy Free No Bake Desserts You *NEED* This Weekend!

It's been a HOT few weeks as we closed out spring and stepped into summer. Jared and I actually took a road trip up to see family in the northeast, and somehow, the Florida heat traveled with us 🫠

And yet, I'm still always craving something sweet, so I figured you would be too 😉 How about we make something that doesn't require turning on our oven? Sounds like a good idea.

Let's see what's NOT baking lately:

1. Peanut Butter Oreo Icebox Cake

This fully loaded peanut butter Oreo icebox cake is a frozen delight full of dairy free peanut butter fluff, chocolate whipped cream, (dairy free) milk-soaked Oreos, and lots of peanut butter cups!!! Trust me, you’d never believe this icebox cake is vegan!

2. No Bake Vegan Blueberry Cheesecake

This smooth, creamy, and fresh vegan blueberry cheesecake is the easiest no bake cheesecake bursting with real blueberries and set perfectly on a 2 ingredient graham cracker crust!

3. Vegan Pistachio Tiramisù

Tiramisu purists, step aside- this pistachio tiramisu is a rich, creamy, and nutty delight!! We have espresso soaked homemade eggless ladyfingers (no mold needed!), layered with the silkiest pistachio creme mascarpone cream filling, whipped cream, and a hefty dusting of crushed pistachios for good measure.

4. No Bake Vegan Brownie Cookie Dough Cheesecake Bars

Combining the best of brownies, cookie dough, and cheesecake into one, these fudgy and decadent no bake brownie cookie dough cheesecake bars are layered with a chocolate cookie crust, rich brownie cheesecake batter, and studded with homemade cookie dough- all vegan, dairy free, and easy!

5. 7 Ingredient Vegan Peanut Butter Pie

These are on repeat in my house because they're so dang easy. You can use aquafaba, soy milk, almond milk, or oat milk. And for sugars, I've even tested them with coconut sugar and maple sugar for refined sugar free, and you'd never know. AND yes they're jaw-droppingly delicious as gluten free!

6. Easy Vegan Cookie Dough

Don't want to bake the cookies?? No problem. I have a whole edible cookie dough recipe based on my classic chocolate chip cookies that literally tastes like eating Tollhouse cookie dough. I'm not joking. It's the best.

7. No Bake Oreo Cheesecake

These ridiculously creamy no bake vegan Oreo cheesecake is loaded with crushed Oreo cookies, Oreo filling, and the silkiest vanilla bean cheesecake batter. Topped with a 2 ingredient dairy free chocolate ganache, it’s the easiest no bake dessert that’s for cookies n’ cream lovers only!

8. Easy Vegan Ice Cream Sandwiches

These super easy vegan ice cream sandwiches are such a wonderful summer dessert recipe to cool off! Made with a simple 3 ingredient vegan vanilla ice cream and homemade vegan chocolate chip cookies that can easily be made gluten free!

9. Vegan Banana Pudding
