The One Bowl FRESH Strawberry Cake Everyone Is OBSESSED With

Hi Reader!

As someone who adamantly loves chocolate, it takes a lot for me to want to choose a fruity cake over something so deeply rich and decadent.

But this one bowl strawberry cake does just that. Now, when developing it, I really wanted a strawberry cake that had basically the fruity punch of flavor that you get when biting into a fresh strawberry.

And I also wanted it to be made with only fresh strawberries and no strawberry reduction. This was quite a feat, because even in the traditional baking space, they usually call for strawberry reduction if they weren't using strawberry pudding flavoring.

But this strawberry cake is truly one of a kind. It uses only fresh strawberries blended into a puree for that gorgeous subtle pink color in the cake, making it super easy for beginner bakers.

And you just need a bowl and a whisk! It couldn't be easier :) Save this one for any spring occasion, or even Easter coming around the corner!

The color of that frosting is just irresistible! And you can even make it as a sheet cake!

Other reader-favorite fresh cake recipes:

Moist Lemon Blueberry Cake

This one I cannot stop raving about- I developed it nearly 7 years ago now, and it still stands up as one of my all time favorite spring cake recipes. I make it every year for Easter, and it's an absolute smash every time!

One Bowl Lemon Raspberry Cake

I love that you can either fold in fresh or frozen raspberries, or swirl it with my homemade preserves recipe- either works!

Easy Blackberry Lavender Sheet Cake

The lavender adds such a beautiful floral note that actually really enhances the fruitiness throughout the cake. Don't worry- it's light and spring-like, as it should be!

Hope these recipes bring a smile to your face- spring is right around the corner, we're nearly there (says someone who just moved back to the Northeast 3 weeks ago and had 3 solid snowstorms in that time ha!).

gnocchi alla Sorrentina

Hi Reader! A week ago, snow was blanketing the ground, and now we're enjoying some slightly warmer temps, albeit drizzly and soppy (though I kind of love it?! I'll sound weird for this, but 4 years of perpetual summer really has made me appreciate every single seasonal change!). Which means I'm still very much focused on cozy and comforting meals that are simple, quick to make, and have high pay-off (meaning you probably will get a few nights out of it!). Oh, and of course, taste freaking...

Hi Reader! So I'm a little embarrassed to say this, but I literally now have this single serve chocolate chip cookie recipe memorized. Like, I could recite it and even make it in my sleep, and it's a little too easy that I could easily just make a second cookie from it...and a third...and maybe a fourth. But it's just SO. GOOD. Like bakery-style thick, soft with crisp, lightly browned edges, and pools of molten chocolate chips in every bite. It's the perfect cookie, and need I say that it's...
