3 easy vegan dinners I'm making this week (SO good!!)

If dinner has been feeling a little repetitive lately, you’re not alone (hi, that was me right before our big move!!).

I’ve been in that exact loop—defaulting to the same easy meals on autopilot. But since moving, I've been really challenging myself to make the family something way more exciting...

While also keeping it somehow insanely simple!

Here are 3 dinners I’m making on repeat right now:

For tonight- easy, but tastes restaurant-worthy:

Crispy Herbed Tofu Bowls with Roasted Sweet Potato

Everything roasts on one pan, then you just assemble. It’s comforting, balanced, and somehow feels like a real meal without the effort!

For lazy nights (ready in 10 minutes):

Creamy Lemony Butter Beans & Spinach

This one really surprised me!! We're actually obsessed, and I keep putting flavor variations on it. It’s rich and velvety without any vegan cream or cheese, super zesty, and perfect with toasted sourdough or over pasta.

For leftovers that will actually get eaten:

Sweet Potato Chickpea Curry

I made this on Sunday and had dinner ready for Monday (Tuesday too, if my husband didn't devour it all!!). It simmers into something really flavorful, but only takes about 20 minutes of actual effort!

Here's what Josee had to say about the curry:

Absolutely delicious- I used almond butter as we had finished the peanut butter. I only had light coconut milk but it was just perfect

Honestly, I cannot wait to make these again (even though I just had them!!).
