The EASIEST Warming Sheet Pan Recipe I Make On Chilly Spring Nights


Hey Reader!

Though we've finally reached spring, it's still very chilly (at least where we are!), so on these colder spring nights, this is what I'm constantly making this recipe.

It just ticks all of the boxes:

  • Simple ingredients: Mostly pantry staples too- lentils and tahini?! A must!
  • Easy to make: Simply chop & roast!
  • Ridiculously flavorful: This one is an absolute crowd-pleaser. It's one I make for even my non-vegan parents when they come over for dinner- my mom and dad can't get enough of it!

Roasted Lentil & Sweet Potato Salad

With a creamy tahini drizzle and fresh parsley on top, it's so hard to stop eating this dish once you start!

And for a quick weeknight treat:

Small Batch "Brown Butter" Vegan Blondies

They're even easier than my small batch cookies, and you can pop them in the oven while you're eating dinner!

And a quick update: we're moving into our new home this week, and I cannot wait!!

It's been a month and some change since we sold our house, packed everything up, and moved from Florida to Connecticut. Since then we've been staying with my parents, which has been such a blessing because I'm not sure what we would have done without them, but the timing worked out wonderfully.

And we're just down the road from them, so we now get to have them over for dinner again as a thank you for hosting us and our fur babies!

So excited for what this season will bring :) And excited to get back to testing and sharing new recipes again because oh, I've missed it so much!! Thank you for your patience!
