Week of 3/8: Your Vegan Weeknight Meal Plan!


Hi Reader!

A week ago, snow was blanketing the ground, and now we're enjoying some slightly warmer temps, albeit drizzly and soppy (though I kind of love it?! I'll sound weird for this, but 4 years of perpetual summer really has made me appreciate every single seasonal change!).

Which means I'm still very much focused on cozy and comforting meals that are simple, quick to make, and have high pay-off (meaning you probably will get a few nights out of it!).

Oh, and of course, taste freaking amazing, regardless of being vegan ;)

That's what I really wanted when thinking about what to make for my own family this week. As we're settling in, it's still been a lot of moving pieces (quite literally), so I really needed to rely on quick, easy, simple, and comforting meals that I know will yield leftovers (meaning lunch is even taken care of- YAY!).

What I'm Making This Week:

Sunday & Monday: Lentil Shepherd's Pie

When I finally set out to make a lentil shepherd's pie, I needed it to be incredibly simple yet maintain all of the comfort of the traditional, and that's exactly it. It's easy enough to assemble, and your reward for prepping this on Sunday is that you'll have leftovers Monday for a quick & easy dinner to start the week!

Tuesday: 15 Minute Crispy Teriyaki Tofu

I just LOVE how simple and quick this recipe is to prepare. Now, the rice, of course, takes a bit longer to prep, as you need to soak it, but steam up some greens and serve alongside your tofu, it's the best comforting meal for these chilly, wet evenings before spring!

Wednesday & Thursday: Brothy Lentil & Potato Soup

One of my FAVORITE soups that I keep putting in our rotation weekly because it uses pantry staples, the ingredients are simple, it's freaking easy, and there are leftovers (if I beg my husband enough!). Consider Wednesday and Thursday covered with this- just pair a side of 15 minute vegan garlic bread along with it!

Friday: Gnocchi alla Sorrentina (or takeout!)

I know that feeling at the end of the week- the last thing you want to do is think about dinner and you're already checking out mentally by midday! This Gnocchi all Sorrentina - made entirely dairy free - is my solve for that. It's ready in 30 minutes, and easy to assemble within 5. Or...there's always takeout ;)

Gooey Vegan Cinnamon Rolls ⭐️⭐️⭐️⭐️⭐️

"Absolutely Amazing, I love baking and usually take normal recipes and re-work them to be veganized. I didn’t have the brain power to do that today and my boys kept asking me for cinnamon rolls, I stumbled across this recipe on youtube and it is fantastic. Will make again." ~Isabel
