30 Minute Vegan Dinners I Swear By


Hey Reader!

I'm writing to you from- surprise! - the northeast! Because we officially moved from sunny Florida back up north to Connecticut, and we are thriving, even in the freezing cold (and multiple snow storms!).

As we're settling in, I have to say, these 30 minute dinners have been saving my family through this move. Whether you're in the middle of crazy work week, trying to juggle school schedules with the kids, or (like me currently) unpacking boxes, you can easily rely on these ridiculously flavorful, easy, simple, and satisfying dinner recipes to be there for you this week.

And the best part? I can now bring leftovers to my extended family, who aren't even vegan, yet they beg for these recipes (especially the lasagna soup!).

My Go-To 30 Minute Easy Vegan Dinners:

Chickpea Broccoli Alfredo Skillet

I can't get over how close to Alfredo sauce this truly tastes, and it is amazing sopped up with fresh crusty bread! Spoiler- it's actually ready in 20 minutes!

Tofu Peanut Satay

I kid you not, my husband devoured half of this recipe, so there weren't many leftovers at all (I practically begged him to leave me some so that I could enjoy the next day and have an even quicker dinner!). It. is. SO. GOOD.

Quick Lentil Lasagna Soup

Lasagna is easy enough to make, but bakes long in the oven. This soup is quite literally ready in 30 minutes to serve, and the pasta cooks right in the broth! Like deconstructed lasagna in soup form- it is perfect for these chilly nights.

30 Minute Pasta con Broccoli

This simple yet flavorful pasta comes together in a snap of a finger and pairs beautifully with some cannellini beans or even pan-seared tofu!

Bruschetta Pasta with Roasted Garlic

May be more of a summer-y dish, but it's yummy enough to channel in some warmer vibes. I credit this all to Jared, my husband- he one day asked for deconstructed bruschetta in pasta and I thought that was just a brilliant idea!

Lentil Meatballs

I just adore these easy lentil meatballs. They're hearty, comforting, packed with flavor, and you can easily serve them as vegan meatball grinders or over your favorite pasta. It's the most comforting dish of the season, in my opinion.

Creamy Garlicky Tomato & Spinach Butter Beans

I could easily devour this entire dish on its own...but I resist, because I know others need to eat as well ๐Ÿ˜‚ It's just SO good, and another that pairs perfectly over pasta or sopped up with some fresh bread (or garlic bread!). And readers have just been loving this one- no one even notices it's entirely plant-based!

What's New:
