The PERFECT Single Serve Chocolate Chip Cookie (I have it memorized, it's so good!) 🍪

Hi Reader!

So I'm a little embarrassed to say this, but I literally now have this single serve chocolate chip cookie recipe memorized.

Like, I could recite it and even make it in my sleep, and it's a little too easy that I could easily just make a second cookie from it...and a third...and maybe a fourth.

But it's just SO. GOOD. Like bakery-style thick, soft with crisp, lightly browned edges, and pools of molten chocolate chips in every bite. It's the perfect cookie, and need I say that it's entirely dairy free and eggless (so yeah, vegan 🙃)???

And I don't know about you, but I think every day deserves a sweet treat! But I'm a dessert-every-day kind of gal, and there's no chance of stopping that!

Single Serve Vegan Chocolate Chip Cookie

It's a little too easy, so you'll either love me or hate me for this, I'm so sorry 😂and YES, you can make it gluten-free!

Other reader-favorite small batch recipes:

Small Batch 'Brown Butter' Vegan Brownies

And the crinkle top just gets me every time! Readers go NUTS for these! One reader wrote "These small-batch bites go so quickly in my household and the recipe is foolproof." Enough said!

MOIST Vegan Vanilla Cupcakes for Two

You could easily cut this recipe in half though for just a single serving! It's based off of my classic vegan vanilla cupcakes (which I perfected after working at a cupcake bakery in college!), and it's honestly the nicest cupcake I've ever had!

No Bake Mini Oreo Cheesecakes For Two

It's a little frustrating that this is no bake honestly because you can easily just eat the batter and skip the whole freezing part entirely. BUT I highly recommend chilling these, however difficult it is (I know, I'm right there with you!) because the perfectly set, mousse-like texture is ridiculously good.

I feel like these are just the right amount for when you want something quick, easy, and not a full batch to serve a crowd (though those hosting moments are coming soon enough for us!).

So cozy up on the couch with a freshly baked brownie, cookie, or the like and a hot mug of tea, and enjoy your evening with one of these treats- you so deserve it!

Hope your week is going amazing- sending you the biggest hug!!

Xx,

scoopable s'mores cookie

Hey Reader! Okay… I finally understand the scoopable cookie obsession. For the longest time, I didn’t get it. I was waffling for a while between sharing a cookie skillet or a scoopable cookie recipe, which for those not on social media, you may be wondering (and rightfully so):Scoopable cookie?? Essentially a cookie baked in a skillet? WHAT IS THE DIFFERENCE?!Like, why not just make a cookie skillet? But now I see the difference. Scoopable cookies means softer dough, baked just enough, and...

Hi Reader! Okay, so I wasn't planning on making this...but then I just couldn't stop thinking about cookie dough and NEEDED to try. So I tested something a little unhinged (in the BEST way): Small Batch Cookie Dough Cheesecake We have a 'buttery' soft cookie dough crust with a rich, creamy cheesecake folded with chunks of edible cookie dough and finished with a 2-ingredient chocolate ganache and more edible cookie dough!! And everyone went nuts for it on Instagram. Small Batch Cookie Dough...
