The PERFECT Single Serve Chocolate Chip Cookie (I have it memorized, it's so good!) πŸͺ

Hi Reader!

So I'm a little embarrassed to say this, but I literally now have this single serve chocolate chip cookie recipe memorized.

Like, I could recite it and even make it in my sleep, and it's a little too easy that I could easily just make a second cookie from it...and a third...and maybe a fourth.

But it's just SO. GOOD. Like bakery-style thick, soft with crisp, lightly browned edges, and pools of molten chocolate chips in every bite. It's the perfect cookie, and need I say that it's entirely dairy free and eggless (so yeah, vegan πŸ™ƒ)???

And I don't know about you, but I think every day deserves a sweet treat! But I'm a dessert-every-day kind of gal, and there's no chance of stopping that!

Single Serve Vegan Chocolate Chip Cookie

It's a little too easy, so you'll either love me or hate me for this, I'm so sorry πŸ˜‚and YES, you can make it gluten-free!

And the crinkle top just gets me every time! Readers go NUTS for these! One reader wrote "These small-batch bites go so quickly in my household and the recipe is foolproof." Enough said!

MOIST Vegan Vanilla Cupcakes for Two

You could easily cut this recipe in half though for just a single serving! It's based off of my classic vegan vanilla cupcakes (which I perfected after working at a cupcake bakery in college!), and it's honestly the nicest cupcake I've ever had!

No Bake Mini Oreo Cheesecakes For Two

It's a little frustrating that this is no bake honestly because you can easily just eat the batter and skip the whole freezing part entirely. BUT I highly recommend chilling these, however difficult it is (I know, I'm right there with you!) because the perfectly set, mousse-like texture is ridiculously good.

I feel like these are just the right amount for when you want something quick, easy, and not a full batch to serve a crowd (though those hosting moments are coming soon enough for us!).

So cozy up on the couch with a freshly baked brownie, cookie, or the like and a hot mug of tea, and enjoy your evening with one of these treats- you so deserve it!

Hope your week is going amazing- sending you the biggest hug!!

Hi Reader! As someone who adamantly loves chocolate, it takes a lot for me to want to choose a fruity cake over something so deeply rich and decadent. But this one bowl strawberry cake does just that. Now, when developing it, I really wanted a strawberry cake that had basically the fruity punch of flavor that you get when biting into a fresh strawberry. And I also wanted it to be made with only fresh strawberries and no strawberry reduction. This was quite a feat, because even in the...

bowl of sweet potato chickpea curry

Hey Reader! So today we're looking at 4 very simple, very universal and popular ingredients that are staples in both a vegan and non-vegan kitchen that you can use for some really delicious plant-based goodies (that no one will...

gnocchi alla Sorrentina

Hi Reader! A week ago, snow was blanketing the ground, and now we're enjoying some slightly warmer temps, albeit drizzly and soppy (though I kind of love it?! I'll sound weird for this, but 4 years of perpetual summer really has made me appreciate every single seasonal change!). Which means I'm still very much focused on cozy and comforting meals that are simple, quick to make, and have high pay-off (meaning you probably will get a few nights out of it!). Oh, and of course, taste freaking...
